Oyster Mushroom Shawarma Salad

Ingredients

Salad Base

  • 1 head of lettuce, chopped

  • 1 beef tomato, diced

  • 3 radishes, sliced

  • ½ pepper, chopped

Bala Dressing

  • 70 g Bala Cheese

  • 2 garlic cloves, grated

  • 1 tbsp pomegranate molasses

  • 3 tbsp olive oil

  • 1 tbsp sumac

Shawarma-Style Mushrooms

  • 300 g oyster mushrooms

  • 2 tbsp Bala Cheese Olive Oil (for marinade)

Spice Mix

  • 1 tbsp allspice

  • 1 tbsp ground coriander

  • 1 tbsp cumin

  • 1 tsp sumac

  • 1 tsp turmeric

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp ginger powder

  • 1 tsp ground cloves

  1. Make the dressing: Mix Bala Cheese, pomegranate molasses, olive oil, garlic, and sumac until creamy.

  2. Prep the salad: Add lettuce, tomato, radish, and pepper to a large bowl.

  3. Marinate the mushrooms: Coat the oyster mushrooms with olive oil, Bala Cheese, and all the spices.

  4. Grill: Roast or grill until golden and crisp on the edges. Assemble: Toss the salad with the Bala dressing. Finish: Top with the warm grilled mushrooms and serve.
